Apples and the smell of cinnamon always make me think of Fall.
Being bundled up in a cozy scarf in the crisp cool air. Pumpkins, the changing of the leaves, the beautiful warm glow of an early sunset – I do believe that I love Fall most of all. Apple picking has been on my bucket list for years, but sadly I do not live any where close to an apple orchard so cooking with apples is the next best thing. These cinnamon apple energy bites taste so yummy, they’re like jumping in to a pile of fresh Fall leaves!
Apples are available year round, but to me they are best enjoyed in the Fall. Typically I would make apple crisp, but I wanted to whip up something healthy I could take for an on the go snack. A few weeks ago my friend Allison made a batch of apple energy bites and a light bulb went off in my head – these would be the perfect snack to make.
Like I mentioned over on Instagram, I have a difficult time cooking seasonally so my go to resource is Pinterest for recipes. There were so many that looked delicious, but I finally decided on two which I then combined and modified to make these cinnamon apple energy bites.
These tasty bites are pretty simple to make and you’ll have a big batch to munch on through out the week. They’re slightly sweet and nutty, with a good crunch from the fresh apples – my husband even gave his seal of approval!
CINNAMON APPLE ENERGY BITES
1 cup chopped small red apples
1/2 cup diced dried apricots
2 cups oats
2 teaspoons chia seeds
1 tablespoon maple syrup
1/2 cup almond butter
1 teaspoon cinnamon
2 teaspoons allspice
1/2 teaspoon vanilla extract
4 tablespoons water
Chop 1 cup red apples in to very small pieces. Dice 1/2 cup dried apricots.
Mix apples, apricots, oats, chia seeds, cinnamon, and allspice in a large mixing bowl. Add almond butter, vanilla extract, and maple syrup. Stir to combine until the consistency of lumpy batter. Add in water and stir mixture.
Roll or mold the mixture in to 1-2 inch balls. I used an ice cream scoop to help shape. Place balls on a baking sheet.
Freeze balls for 30 minutes in the freezer. Transfer to an air tight container and store in the refrigerator.
These little bites are great for breakfast, or pop a couple to hold you over in between meals. Best part is that they taste like Fall! You’re gonna love these so much you’ll want to share with your friends.
Make a double batch and pack some up to deliver a tasty treat to neighbors and friends.
